Golden Ham Casserole

2 cups cubed potatoes
1 cup sliced carrots
1 cup chopped celery
2 cups cubed ham
2 TBSP chopped green pepper
2 tsp. chopped onion
1/4 cup plus
3 TBSP butter or margarine, divided
3 TBSP all-purpose flour
1-1/2 cups milk 1/2 cup (2 ounces)
shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper
1/2 cup soft breadcrumbs
Cook potatoes, carrots and celery in a small amount of boiling unsalted water until crisp-tender; drain and set aside.

Pittsburgh's Ham Sandwich

1 lb chipped ham
1/2 cup onion, diced
1 tablespoon light brown sugar
1 teaspoon Dijon mustard
1/2 teaspoon chili powder
1 tablespoon sweet relish
1 (12 ounce) jar chili sauce
1/2 cup water
hamburger buns
Directions
Run the ham under hot water in a colander for about 30 seconds to get some of the salt out of the ham, but not too long.
In saucepan, mix all ingredients, making sure the ham is well coated.
Cook for about 20 minutes.
Serve on hamburger buns that have been buttered and toasted.
Serves 6

Ham & Cola

3 TO 4 LB. Precooked hham
1/4 C. cola-type soft drink
1 tsp. horseradish
1 tsp. dry mustard
1/2 cup brown sugar
Procedure
Thoroughly combine brown sugar, mustard and horseradish.
Moisten with just enough cola to make a paste (smooth); reserve remaining cola. Rub entire ham with mixture. Place in crock pot and add remaining cola.
Cook over low heat 6-10 hours or High 2-3 hours.
Yields about 3 quarts
** a 5-lb ham can be used in a 5 qt Crock Pot
