Lemon 'N Herb Seasoning

Grated peel of 1/2 fresh lemon
2 tsp. dried parsley flakes
1/2 tsp. garlic powder
1/2 tsp. dried oregano or basil leaves crushed
1/2 tsp. dried marjoram leaves crushed
1/2 tsp. ground allspice
1/2 tsp. pepper
Combine all ingredients. Refrigerate in covered container.
To use, sprinkle over meat, poultry or fish before broiling or baking.

Michelle's Steak Marinade

1/2 Stick of butter
Ground Black Pepper
Small onion - chopped
1 Clove of garlic -minced
Dry Red Wine - about a cup or two
Muchrooms-sliced (optional)
1-2 shallots - chopped
Bring wine mixture to a boil and simmer steaks about 3-5 minutes.
Remove from marinade and grill or broil as usual.
Make enough marinade depening on the amount of steaks you will be cooking.
Recipe may need to be increased.

Jack Daniel's Marinade

1/4 cup Jack Daniel's whiskey
1/4 cup soy sauce
1/4 cup Dijon−style mustard
1/4 cup minced green onion and tops
1/4 cup firmly packed light brown sugar
1 teaspoon salt
Dash of Worcestershire sauce
pepper to taste
Combine all ingredients. Blend well.
Use to marinate shrimp or scallops for one hour.
Beef, chicken or pork should marinate refrigerated overnight.
Use to baste the shellfish or meat as it is grilled or broiled.

Pumpkin Pie Spice

1 tablespoon ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon freshly grated nutmeg
big pinch of cardamom (or you can substitute mace)
Blend all spices together, working out any lumps that might occur. Store in an old spice jar.
Makes about 2 tablespoons

Delilah's Easy Chicken Marinade

8 pieces legs and/or thighs
1/4 cup lemon juice
1/2 cup extra virgin olive oil
Several cloves of garlic, smashed with the side of a knife
Seasoning salt
1/2 teaspoon black pepper corns
Put all ingredients into a plastic zipper bag and throw in the fridge for a few hours.
Drizzle Newman's Own Italian dressing over chicken as it cooks on the grill.

Cajun Blackening Spices

1 teaspoon ground dried oregano
1 teaspoon ground dried thyme
1 teaspoon cayenne pepper
1/2 teaspoon finely ground black pepper
1/2 teaspoon finely ground white pepper
1/2 teaspoon garlic powder
Mix together and store in an air−tight container.

Kansas City Dry Rib Rub

1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder
3/4 tablespoon garlic powder
3/4 tablespoon onion powder

Mix all ingredients together and store in an air tight container.

Carolina BBQ Dry Rub

2 tablespoons salt
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons freshly ground black pepper
1 tablespoon cayenne pepper
1/4 cup paprika
Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken, lamb or pork.

Sloppy Joe Seasoning Mix

Ingredients
1 T dried onions
1 tsp. bell peppers freeze-dried
1 tsp. salt -- or to taste
1 tsp. cornstarch
1/2 tsp dried minced garlic
1/4 tsp. dry mustard
1/4 tsp chili powder
Procedure
Measure all ingredients into a Ziploc bag, seal & shake well. (makes 1 mix or approx 3 T).
To Use:
1 lb ground beef,
1 mix recipe Sloppy Joe seasoning mix,
8 oz. Tomato Sauce,
1/2 cup water.
Brown beef and then drain.
Add remaining ingredients, simmering about 10 minutes.
Serve over hamburger buns.

Home Made Bead Crumbs

Ingredients
Any stale bread or old bread that isn't moldy
salt and pepper
garlic powder
Parmesan cheese
Italian spices (dried oregano, dried basil, etc.)
Procedure
Tear up the bread into small pieces. Let dry out in a bowl for a couple of days until hard.
Then throw in your spices. Toss well. Then in a blender or food processor ?
make into crumbs.
Put in sealed container.

Coating Mix For Oven Fried Chicken

Ingredients
2 cups dry bread crumbs
1 1/2 teaspoons salt
1 1/2 teaspoons paprika
1 teaspoon celery salt
1 teaspoon onion salt
1/4 teaspoon pepper
1 teaspoon poultry seasoning (optional)
1/4 cup vegetable oil
Procedure
Mix together well. Keeps unrefrigerated in tightly covered container.
Baking instructions:
Put 1/2 cup coating mix in paper or plastic bag. Moisten chicken with water or milk, and shake, one piece at a time, in the bag.

Bay Seafood Seasoning Blend

Ingredients
1 tablespoon ground bay leaves
2 1/2 teaspoons celery salt
1 1/2 teaspoons dry mustard
1 1/2 teaspoons black pepper
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon paprika
1/2 teaspoon red pepper
1/4 teaspoon ground mace -- (optional)
1/4 teaspoon ground cardamom -- (opt.)
Procedure
Combine all ingredients; store in an airtight container.
Use with seafood or chicken.
Yield: 1/4 cup.

2 tablespoons salt
2 tablespoons sugar

Wendy's Chili Seasonings

Ingredients
2 tablespoon red pepper flakes
1 tablespoon seasoned salt
1 tablespoon dry minced onion, powdered
1 teaspoon dry parsley flakes, powdered
1 teaspoon granulated garlic, powdered
1 envelope taco sauce mix
Procedure
Stir all ingredients well together and store in a bottle with tight cap. Keep at room temp and use within 6 months.

Taco Bell Seasoning Clone

1 tablespoon all-purpose flour
1 tablespoon cornstarch
1 tablespoon dried onion flakes
1 teaspoon beef bouillon granules
1 teaspoon garlic salt
1 teaspoon ground cumin

1 teaspoon chili powder
1/2 teaspoon onion salt
1/4 teaspoon cayenne pepper
1/4 teaspoon granulated sugar
Procedure
Combine and store in an air-tight container.
Notes: To make taco meat, brown 1 lb ground beef in skillet; drain. Add seasoning mix and 3/4 cup of water. Bring to a boil then reduce heat. Simmer uncovered, 10 minutes, stirring occasionally.

Taco Bell Meat Seasoning

Outback Steak Seasoning

Ingredients
1 envelope taco seasoning mix
1 envelope dry Italian dressing mix
Procedure
Pierce steaks in several places with tines of fork. Rub in oil and dust in seasoning mixture.
Then pour Cola (Diet or Regular) around steaks in deep plastic or glass container and seal with plastic wrap.
Refrigerate for 24 hours.
Drain and grill or seal or broil as you wish.

3/4 cup paprika

1/4 cup chili powder (like Gebhard's or homemade)

2 tablespoons garlic powder
2 tablespoons onion powder

Procedure
Mix all ingredients together in a bowl.
Store in a tightly covered container.
Store in the refrigerator.

KFC - Chicken Seasoning Spices

Procedure
Place all ingredients in blender and pulse for 3-4 minutes to pulverize, or rub through a fine strainer.
