granola
Chunky Date, Coconut and Almond Granola

2 C. Old-fashioned oats
3/4 C. Whole almonds; halved
1/2 C. Sweetened flaked coconut
1/2 C. Raw cashews
1/3 C. Firmly packed brown sugar
1 1/2 tsp. Ground allspice
1 tsp. Ground cinnamon
1/4 C. Unsalted butter
2 tblsp. Honey
1 C. Packed pitted dates each cut crosswise into thirds
Preheat oven to 300 F.
Mix first 7 ingredients in large bowl. Melt butter with honey in heavy small saucepan over low heat.
Pour over granola mixture and toss well. Spread out mixture on cookie sheet.
Bake 20 minutes, stirring occasionally. Add dates; mix to separate any clumps.

8 C. regular rolled oats
1 1/2 C. wheat germ
1/2 C. coconut
1 C. chopped dried fruit
1 C. sliced almonds
1 1/2 C. brown sugar, firmly packed
1 1/2 C. unprocessed bran
1 C. raisins
1 C. dried bananas
1 C. sunflower seeds
3/4 C. vegetable oil
1 1/4 C. honey
3 tsp. vanilla
Combine oats, wheat germ, coconut, fruit, almonds, brown sugar, bran, raisins, bananas and seeds in large mixing bowl. Set aside.
Heat oil, honey and vanilla and combine thoroughly with first mixture.
Place on large cookie sheet.

Old Fashioned Cherry Granola

1/2 tsp cinnamon
1/4 cup dried cherries, chopped
3 cups old fashioned rolled oats
1 tbs apple juice
1 tbs oil
2 tbs honey
1/4 tsp salt
3 tbs chopped walnuts
Heat the oven to 300 degrees.
In a bowl, combine oats, walnuts, cinnamon and salt. In a saucepan, combine honey, oil and apple juice and cook 2 min. Add the honey oil mixture to the oats. Mix well.
Spread the mixture in one layer on a baking sheet lined with parchment paper.
Bake the granola 25 min. or until golden brown.

Crock Pot Apple Granola Dessert

4 medium tart apples, peeled and sliced
2 cups granola cereal with fruit and nuts
1/4 cup honey
2 tablespoons butter
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
vanilla ice cream or whipped topping, optional
In a slow cooker, combine apples and cereal. In a bowl, combine honey, butter, cinnamon and nutmeg; pour over apple mixture and mix well.
Cover and cook on low for 6 to 8 hours.
Serve with the ice cream or whipped topping.
4 to 6 servings.

Christmas Granola

4 cups Quaker Oats (Quick or Old Fashioned, uncooked)
1/2 cup shredded coconut
1/2 cup chopped pecans
1/2 cup honey
1/4 cup raw, unsalted sunflower seeds (optional)
1/4 cup (1/2 stick) butter or margarine, melted
2 tsp. grated orange peel
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/4 tsp. salt, optional
6 oz. pkg. dried cranberries (about 1-1/3 cups)
Heat oven to 350. Combine all ingredients except cranberries in large bowl; mix well.
Spread evenly in 15x10-inch jelly roll pan. Bake 40 minutes or until golden brown, stirring every 10 minutes.
