Apricot Bread

1 cup snipped dried apricots
2 cups warm water
1 cups sugar
1 egg
3/4 cup orange juice
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts
2 tablespoons butter, softened

Soak apricots in warm water for 30 minutes.
Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice.
Combine flour,baking powder, baking soda and salt; stir into creamed mixture just until combined.
Drain apricots well; add to batter with nuts.

Pour into a greased 9-in. x 5-in. loaf pan.

Ingredients
PAM® Original No-Stick Cooking Spray
1 C. All-purpose flour
3/4 C. whole wheat flour
1/2 C. cup  packed brown sugar
1-1/2 tsp. Baking soda
1/4 tsp. cardamon
1-1/2 C. Unsweetened apple juice
1/2 C. Bran Flakes
1 C. Buttermilk
1/4 C. Egg Beaters® Egg Product
2 Tbsp. Wesson® Pure Vegetable Oil
1/2 C. dried chopped apricots

Procedure
Preheat oven to 350°F.

Coat an 8 1/2-inch by 4 1/2-inch loaf pan with cooking spray. Dust lightly with a small amount all-purpose flour. Set aside.
