Banana Crumb Muffins

1 1/2 cups all purpose flour
3 large ripe bananas, mashed
1 tsp. baking soda
3/4 cup sugar
1 tsp. baking powder
1 egg, slightly beaten
1/2 tsp. salt
1/3 cup butter or margarine, melted
Topping:
1/3 cup packed brown sugar
1 Tbsp. flour
1/8 tsp. cinnamon
Preheat oven to 375 degrees F.
In large bowl combine the first 4 dry ingredients. In a separate bowl mix the rest of the ingredients.
Stir banana mixture into dry ingredients until just moistened. Fill muffin cups 2/3 full.
Combine the Topping ingredients.

Easy Banana Pudding Parfaits

24 Nilla Wafers, divided
2 cups cold milk
1 (3 oz.) pkg. JELL-O Banana Cream Flavor Instant Pudding and Pie Filling
3/4 cup thawed Cool Whip Whipped Topping
1 medium banana, cut into 20 slices
Crush 20 of the wafers tor form coarse crumbs; set aside.
Pour milk into medium bowl. Add dry pudding mix. Beat with wire whisk 2 min.
Gently stir in whipped topping.
Layer half of the wafers crumbs and 8 of the banana slices evenly in four individual parfait glasses or individual dessert dishes; cover with half of the pudding mixture.

Banana Pineapple Dessert

Banana Pineapple Dessert
Ingredients:
CRUST
1 stick unsalted butter, softened
2-1/2 cups graham cracker crumbs
1/2 cup sugar
FILLING
2 packages Philadelphia Cream Cheese, softened
2 cups sugar
4 large bananas, cut into slices
1 (20 ounce) can crushed pineapple, *drained*
1/2 cup maraschino cherries, chopped
8 ounces *WHIPPED* cream, sweetened with 1/4 cup powdered sugar
1/2 cup chopped walnuts (or pecans)
Directions:
CRUST
Mix ingredients in bowl - leave 1/4 cup crumbs aside.
Press in a 9 X 13 pan.
Bake at 350 degrees F for 5 min, let it cool.

Banana Boat

1 Banana
Mini marshmallows
Chocolate chips
Raisins (optional
Partially peel banana. Cut wedge-shaped section in banana. Remove wedge.
Place in hollow: marshmallows, chocolate, and raisins. Cover mixture with banana peel and wrap in foil.
Place in for about 5 minutes, until chocolate and marshmallows are melted.

May's Banana Dessert

Ingredients
2 small pkg. banana pudding
4 cups milk
2-3 bananas
Vanilla wafer cookies
1 small container whipped topping
Nuts, chopped, optional
Procedure
Prepare pudding according to package directions and set aside.
Cover bottom of 9x13 pan with vanilla wafers.
Place a layer of sliced bananas on top of vanilla wafers then spread with pudding.
Top it all with whipped topping and sprinkle with nuts.
Chill. Best served the same day.

Mother's Secret Banana Bread

Ingredients
3 large bananas
1/2 cup butter
1 cup sugar
2 eggs
2 cups flour
1 teaspoon soda
1/4 cups nuts if desired (also chopped dates)
Procedure
Preheat the oven to 325 degrees F.
Crush bananas and whip until very light. Cream butter and sugar. Add eggs, then flour, soda, and nuts. Add bananas last. Turn into well-greased bread pan. Bake slowly about 1 hour.
The bananas end up liquefied, which may be why this bread does indeed have a very delicate texture.

Banana Gingerbread Muffins

1 pkg gingerbread cake & cookie mix
1 cup mashed very ripe bananas (2 medium)
3/4 cup quick-cooking or old-fashioned oats
3/4 cup water
2 eggs
Heat oven to 375 deg. Grease bottoms only of 16 medium muffin cups, 2 1/2x 1 1/4", with shortening, or line with foil or paper baking cups.
Mix gingerbread mix (dry) remaining ingredients in large bowl until well blended.
Divide batter evenly among muffin cups.
