Complete Pancake Mix

Ingredients
6 cups all-purpose flour
2 tablespoons baking powder
1 tablespoon salt
1 cup dry milk powder
1 cup shortening

Procedure
In a large bowl, mix together flour, baking powder, salt and dry milk.
Cut in shortening until mixture resembles coarse cornmeal. Store in airtight container in refrigerator.

To make pancakes:

1 1/3 cup dry mix
3/4 cup water
1 egg

Bulk Cocoa Mix

Ingredients
1 lb. cocoa (4 cups)
2 lb. sugar (4 cups)
6 lb. dry milk (15 cups)
1 tsp. salt

Procedure
Sift cocoa, if necessary. Mix with sugar, dry milk and salt. Package  in large plastic bags and measure out what you need when you're ready to  make cocoa.
Or package in smaller plastic bags for fewer servings

To make 20 servings, mix 4 cups of mix with 1 gallon warm water. Heat  untilright temperature to serve, but do not boil.

To make 5 servings, mix 1 cup of mix with 4 cups of warm water.

Bulk Cocoa Mix

Ingredients
1 box nonfat dry milk (8 quart size)
1 container Nestle's Quick mix (16 oz)
6 ounces nondairy creamer (powdered)
1 1/2 cups powdered sugar
1 cup Dutch process cocoa

Procedure
Mix all and store in airtight container.

To prepare:
Add 1/2 c. mix to cup of hot water. Stir well.

Can add mini marshmallows also.
****Flavored powdered creamers for a twist.

Beef Gravy Mix

Ingredients
1 1/3 cups nonfat milk powder
3/4 cup flour
3 tablespoons instant beef bouillon granules
1/8 teaspoon ground thyme
1/4 teaspoon onion powder
1/8 teaspoon ground sage
1/2 cup butter
3 teaspoons brown sauce for gravy

Procedure
Combine milk powder, instant flour, bouillon granules, thyme, onion powder and sage. Stir with a wire whisk to blend. Cut in butter or margarine until evenly distributed. Drizzle brown sauce for gravy over mixture. Stir with wire whisk until blended.

Spoon into a 3-cup container with a tight-fitting lid.

Basic Cookie Mix

Ingredients
3 cups flour
1 1/2 cups sugar
1 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter flavor Crisco

Procedure
Combine all dry ingredients. Cut in shortening. Store in airtight container.

Baking instructions: Drop Tablespoonfuls 2" apart on greased cookie sheet.
Bake in preheated oven 350¼F for 12-15 minutes.

Makes 8 cups of mix.

Basic Cake Mix

Ingredients
8 C. Cake Flour
1/4 C. Baking Powder
2 1/2 C. Vegetable Shortening
6 C.  Sugar
1 1/2 tsp. Salt

Procedure
In a large bowl, sift together cake flour, sugar, baking powder and salt.
Mix well With a pastry blender, cut in shortening until the mixture is as fine as cornmeal.

Put in a large airtight container.
Label as Basic Cake Mix and store in a cool dry place.
Use with 10 to 12 weeks.

Makes about 16 cups of mix.

Almost Butter

Ingredients
3/4 cup oil
1 cup buttermilk
1 pound margarine, softened
2 tsp.. salt

Procedure
Blend all together in a large bowl. Whip until all is mixed well.  Place in containers and put in the fridge.

Makes 2 pounds

Simple Corn Pudding

Ingredients
1 can corn
1 can creamed corn
1 package corn muffin mix
1 cup sour cream

Procedure
Just mix and bake at 350°until golden brown.

Old Fashioned Bread Pudding

Ingredients
2 CUPS MILK
1/4 CUP MARGARINE OR BUTTER
2 EGGS, SLIGHTLY BEATEN
1 TSP. GROUND CINNAMON OR NUTMEG
1/4 TSP. SALT
6 CUPS DRY BREAD CUBES (8 SLICES)
1/2 CUP RAISINS, IF DESIRED

Procedure
PREHEAT OVEN TO 350 DEGREES.

HEAT MILK AND MARGARINE OVER MEDIUM HEAT UNTIL MARGARINE IS MELTED IS SCALDED. MIX EGGS, SUGAR, CINNAMON AND SALT IN 4-QUART BOWL: STIR IN BREAD CUBES AND RAISINS.

Cinnamon Apples

Ingredients
4 tart apples, sliced
1 C. sugar
1/2 C. water
1/2 lb. red cinnamon candies

Procedure
Pare and slice apples into eighths. Combine sugar, water and candy to make syrup.

Bring to a boil and, when sugar and candy are dissolved, add sliced apples. Cook until apples are soft.

My Amish Friends Caramel Corn

Ingredients:
7 quarts plain popped popcorn
2 cups dry roasted peanuts (optional)
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1 cup margarine
1/2 teaspoon baking soda
1 teaspoon vanilla extract

Directions:
1.Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.

2.Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan.

Multi Purpose Baking Mix Like Bisquick- W/ Recipes

Ingredients
8 cups flour (4c. Unbleached flour + 4c. Whole wheat)
1/4 cup double-acting baking powder
4 tsp. Salt
1 cup shortening (can substitute oil, and keep mix refrigerated)
1 and 1/3 cups dry powdered milk

Procedure
In large bowl, blend together: 4 c. unbleached flour, salt, and baking powder. Add shortening and cut in with pastry blender until it resembles coarse crumbs. Stir in powdered milk, then whole wheat flour. Store in an airtight container or heavy duty Ziploc bag (keeps about 2 months).

Confectioners Sugar Replacement

Ingredients
2 C. nonfat dry milk powder
2 C. cornstarch
1 C. granulated sugar replacement

Procedure
Combine all ingredients in food processor or blender. Whip until well blended and powdered.

Yields 4 cups.

Borden's Sweetened Condensed Milk

1/2 C. water
3/4 C. sugar
1 C--(Plus 2 TBSP.) Powdered milk

Procedure
Combine all ingredients and heat to boiling.
Cook until thick~approx. 15-20 minutes.

Yields 1 can

Bisquick

Ingredients

All Purpose Ground Beef Mix

Ingredients
5 lbs Ground Beef or turkey or-chicken
1 tbsp Salt
2 cup Chopped Celery
2 cup Chopped Onion
Diced Green Pepper

Procedure
Carefully brown the meat in pan adding the veggies, stirring well. Remove from heat cool.

Measure 2 cups of mix into vacuum seal bag, seal, label and freeze.

Instant Oatmeal W/ 13 Flavors

3 cups Quick-Cooking Oats
Salt
8 Small Zip Baggies

Put 1/2 cup oats in a blender and blend on high until powdery. Set aside in a small bowl, and repeat procedure with an additional 1/2 cup oats.

If you're using a food processor, you can do the 1 cup of oats in one batch.

Put the following ingredients into each zip baggie:

1/4 cup un-powdered oats,

2 Tbsp. powdered oats,

1/8 tsp. salt.

Store in an airtight container.

To serve: Empty packet into a bowl.

Add 3/4 cup boiling water.

Cake Mix Cookies

Ingredients
Take your favorite cake mix
1/2 cup vegetable oil
2 eggs.
To add excitement to the mix---add other ingredients like raisins, nuts or chocolate chips.

Preheat oven to 350 degrees.
Mix well, then drop teaspoonfuls of dough about 2 inches apart on an ungreased cookie sheet.

Bake about 8 to 10 minutes and cool.

Makes about 3 dozen cookies.
You can top them with powedered sugar or frosting if desired.

Cream of Potato Soup Mug Mix

4 tablespoons instant mashed potato flakes
1 chicken bouillon cube -- crushed
2 teaspoons corn starch

Blend all ingredients in an envelope or sandwich bag; label with directions and seal.

To use: Put contents of one envelope in a cup; add enough cold water or milk to moisten, gradually stir in boiling water to make 1 cup.

Bisquick

Aunt Jamima Maple Syrup

2 Cup Water
1 Cup Sugar
2 Cup Dark corn syrup
1/4 Teaspoon Salt
1 Teaspoon Maple flavoring

Combine the first four ingredients in a saucepan over med. heat. Stir occasionally, until the mixture comes to a full boil. Let it boil for 7 min.
Turn the heat off and let the syrup cool for 15 min. Add the maple flavoring and stir. When completely cool, transfer the syrup to a covered plastic or glass container.

VARIATION: For syrup with a butter flavor, just add 3 tbsp.

Aunt Jermima's Pancake Mix

2 cups Self−rising flour
2 cups Bisquick
1/2 cup Sugar
1/2 cup Non−dairy creamer powder

TO USE THE MIX:
1 Egg
8 ounces 7−up
1 3/4 cups prepared pancake mix

THE MIX: In an 8−cup container, stir together flour, Bisquick, sugar and creamer. Cover tightly. Refrigerate mix to use within 3 months.
Makes 7 cups of mix.

TO USE: Into blender, put egg, 7−up and prepared pancake mix. Blend at high speed until smooth, 1 minute.

Poor Man's Cake

Ingredients
2 cups brown sugar
2 cups hot water
1 teaspoon salt
2 tablespoons solid vegetable shortening
1 package (15 ounces) raisins
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3 cups all-purpose white flour
1 teaspoon baking soda dissolved in 2 teaspoons hot water
 
Procedure
Preheat the oven to 350 degrees F. Grease a 9-inch by 13-inch baking pan.

Amish Cake

Ingredients
2 eggs
2 cups sugar
1 large crushed pineapple
2 cups flour
1 teaspoon baking soda
1 teaspoon vanilla extract
1 cup walnuts, chopped

Frosting:
12 ounce cool whip
1 small vanilla instant pudding mix
1 large crushed pineapple
Procedure
Beat the eggs and sugar together. Add the rest of the ingredients.

Using a greased and floured 9x13-inch pan, bake at 350 degrees for 30 minutes, or until done.

Frosting: Mix all ingredients together.

The Best Banana Bread

Ingredients
1 yellow cake mix
5 or 6 mashed bananas

Procedure
Prepare cake mix according to box directions but use 1/2 cup less water  since you're adding the bananas.
I use a greased 9 x 13 pan and bake about 30 to  35 minutes.

P.S..I also like to use a spice cake mix and a cup of diced apples using the  same directions. Excellent with cream cheese frosting.

Seven-Up Biscuits

Ingredients
1 /4 cup 7-Up
1 /4 cup buttermilk
2 cups biscuit mix
2 tbsp butter (melted)

Procedure
Mix first three ingredients together and knead until smooth and elastic.
Spread dough gently out on floured board until about 1-inch thick. Cut into biscuits and put in greased baking sheet.

Brush tops with melted butter and bake 20 minutes at 450 degrees.

Jiffy Corn Muffin Mix

2/3 cup all-purpose flour
1/2 cup yellow cornmeal
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons vegetable oil

To make muffins add:
1 egg
1/3 cup milk

Combine first 5 ingredients in a bowl, mix well.
Whisk in vegetable oil and mix until dry mixture is smooth and lumps  are gone.
If another recipe is calling for a box of Jiffy Corn Muffin Mix, add  the above mixed ingredients to that recipe.
To make Corn Muffins, preheat oven to 400F, spray muffin pan with non-stick cooking spray

Hamburger Buns

Ingredients
8 cups all purpose flour
2 packages active dry yeast
2 cups warm water
3/4 cup cooking oil
1/2 cup sugar
1 tablespoon salt
3 eggs

Procedure
In large mixing bowl 4 cups flour with yeast.
Combine water, oil, sugar, and salt. Add to flour mixture. Add eggs. Beat at low speed with mixer for 1/2 minute, scraping bowl.  Beat 3 minutes at high speed. By hand, stir in 4 cups flour to make a soft dough.

Turn out on floured surface, knead till smooth and elastic. Place in greased bowl, turning once.
Cover, let rise in warm place till double (about one hour).

Turkey Stuffing Skillet

Ingredients
1 pkg Stove Top Stuffing Mix for Turkey
1½ cups hot water
3 cups chopped Turkey
1 jar (12 oz) Turkey Gravy
1 pkg (16 oz) frozen Mixed Vegetables thawed, drained

Procedure
Add hot water to stuffing mix; stir just until moistened. Set aside.
Cook turkey, gravy & vegetable sin large nonstick skillet on medium heat until heated through stirring occasionally.
Top turkey mixture with prepared stuffing.

Reduce heat to low; cover. Cook an additional 5 minutes.

Makes 6 servings.

Sloppy Dogs

Ingredients
1 can (15 oz.) pinto or Kidney beans,drained
1 can (14 1/2 oz) Del Monte Diced Tomato -Zesty Chili Style
2 Fully cooked hot dogs, sliced crosswise
1 teaspoon mustard
4 Hamburger buns, split
1/ C. shredded cheddar cheese

Procedure
Microwave Directions
Combine all ingredients, except buns and cheese in 2-quart microwavable dish.
Cover and microwave on HIGH 6 to 8 minutes or until heated through.

Place buns on paper towel; microwave on HIGH 30 seconds to 1 minute.
Place buns on 4 dishes, cut side up.

Spoon chili over buns. Top with cheese.
Serve immediately.
