Crockpot Caramel Apple Nachos

2/3 cup packed brown sugar
1/4 cup granulated sugar
1 tablespoon quick-cooking tapioca
1 teaspoon ground cinnamon
11/2 cups apple juice or apple cider
2 pounds cooking apples, peeled, cored, and cut into 1/2-inch-thick
slices (6 cups)
1 tablespoon margarine or butter, cut up
1 8-ounce carton vanilla yogurt
1/4 cup chopped pecans, toasted
1 recipe Cinnamon Tortilla Crisps

Directions
In a 3 1/2- or 4-quart crockery cooker stir together brown sugar, granulated sugar; tapioca, and cinnamon.

Vegetarian Chili

2 Tbsp. olive oil
1 onion, chopped
1 garlic clove, crushed
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
2 Tbsp. cumin
1 tsp. cayenne pepper
3 (14-oz.) cans crushed tomatoes
1 (10-oz.) bag frozen whole kernel corn
4 (10-oz.) cans black beans, rinsed, drained
2 cups picante sauce

Sauté first 7 ingredients in a skillet for 5 minutes. Combine all ingredients in a slow cooker. Mix well. Cover.
Cook on low for 6 hours or high for 3 hours.

Chicken Curry In A Crock Pot

2 whole chicken breasts, boned
1 can cream of chicken soup
1/4 c. dry sherry
2 tbsp. butter or margarine
2 green onions with tops, finely chopped
1 tsp. curry powder
1 tsp. salt
Dash of pepper
Fluffy rice

Cut chicken into small pieces, place in crock pot. Add all remaining ingredients except rice. Cover and cook on high setting 2 1/2 to 4 hours.
Serve over hot rice.

1 (18 oz.) pkg. macaroni, cooked & drained
1 tbsp. salad oil
1 (13 oz.) can evaporated milk
1 1/2 C.. milk
1 tsp. salt
3 C. shredded sharp cheddar cheese
1/2 C. melted butter

Lightly grease crock pot. Toss macaroni and oil. Add all remaining ingredients. Stir, cover and cook on low 3 to 4 hours, stirring occasionally

Crock Pot Pizza

1 1/2 lbs. hamburger
1 med. onion, chopped
2 cans Ragu chunky pizza sauce mix
2/3 pkg. rigatoni noodles
3 lbs. Mozzarella cheese
Olives, peppers, mushrooms - optional
Pepperoni

Brown hamburger and onion together and drain. Mix in sauce mix.
Make alternate layers in crock pot, starting with meat sauce, noodles, pepperoni and cheese.

Cook on low for 5 hours.

Crock Pot Stew

24 oz. pkg. stew vegetables (thawed)
1 lb. stew beef, cut into 1 1/2 inch cubes
1 can (10 1/2 oz.) condensed tomato soup
1/2 c. water
2 tbsp. dried onion flakes
1 tbsp. pepper
1 bay leaf

Place vegetables in bottom of crock pot. Add meat. In separate bowl mix remaining ingredients and pour over meat and vegetables.

Cover and cook over low setting for 10 or 14 hours (high 3-4 hours).

Overnight Baked Beans (Slow Cooker)

Salt and Pepper
1/4 cup cider vinegar
1/2 cup dark brown sugar or Splenda
1 pound small dried white beans
2 tsp dry mustard
1/4 cup molasses
1 medium onion, chopped

In a slow cooker, combine beans, onion, brown sugar, molasses, vinegar, mustard, 5 cups water and 1/4 tsp pepper.
Cook, covered, on low until beans are tender and liquid is syrupy, 12 hours.
The onions will rise to the top and look very dark.
Before Serving stir in 1/2 tsp salt...

Crockpot Bananas Foster

4 T. butter
1/2 cup brown sugar
1 tsp. cinnamon
6 bananas, sliced
1/4 cup rum

Place butter and brown sugar in a 3-1/2 to 4 quart crockpot, cover, and turn on LOW. Let butter melt for 10-20 minutes, then stir to combine.
Add cinnamon, bananas, and rum; turn gently through the brown sugar syrup.

Cover and cook on LOW for about 1 hour until bananas are glazed and softened.

Spoon sauce over pound cake and top with whipped cream or french vanilla ice cream.

BBQ Chicken Crock Style

1 fryer chicken, or 4 to 6 breasts
1/2 cup tomato paste
1/4 cup vinegar
1 tbsp. brown sugar
Salt and pepper to taste

Place chicken in slow-cooker. Mix all other ingredients and pour over chicken. Cook over low for at least 8 hours.
Serve over rice, pasta, or as sandwiches

Crockpot Italian Chicken

12 boneless, skinless chicken thighs, cut into 1-inch pieces
2 14.5 oz cans tomatoes with Italian herbs
2 cups cubed zucchini
1 cup pearl onions, peeled or some chopped onions
1 cup baby carrots
2 tablespoons tomato paste
4 cloves garlic, chopped or 1/2 t garlic powder
1 teaspoon brown sugar
1 teaspoon red pepper flakes

Combine all ingredients in crockpot. Stir to mix.

Cook on low setting 6 to 10 hours or until done. Serve over pasta.

French Dip Sandwich Au Jus

2 tbsp canola oil
1 (3 pound) boneless bottom round beef roast
1 large onion, cut into 1/4-inch-thick slices
2 cups water
1 (1 ounce) pkg au jus sauce mix
12 Bakery hoagie rolls, toasted
shredded Swiss cheese, optional

Heat oil in stockpot over medium heat until hot. Place beef roast in stockpot brown evenly. Remove roast from stockpot. Add onions to
stockpot cook 8 to 10 mins or until tender and lightly browned stirring occasionally. Add water and au jus mix.
Return roast to stockpot bring to a boil.

Pepsi Pot roast

1 (2.5 pound) lean chuck roast
1 envelope onion soup mix
1 (12 ounce) can Pepsi
2 tbsp flour
1/4 cup cold water

Place chuck roast in a greased slow cooker. Sprinkle onion soup mix over roast. Pour Pepsi on top. Cover and cook on LOW for 8 hrs or until roast is tender. Remove roast from slow cooker. Pour cooking liquid into a saucepan skim off and discard fat. Bring cooking liquid to a simmer.

Whisk together flour and water and whisk into cooking liquid. Simmer for 5 to 10 mins or until desired consistency is reached. Gravy will thicken upon standing.
Serve roast with gravy.

Slow Cooker Stuffed Peppers

5 medium green peppers
1 lb lean ground beef
1/3 cup chopped onion
1 (14.5oz) can Italian-style diced tomatoes
1/2 cup instant rice, uncooked
1/2 cup water
1 cup shredded sharp cheddar cheese
1/2 cup medium salsa

Cut tops off green peppers remove seeds and membrane.
Precook peppers in boiling salted water 5 mins drain. Brown meat with onion. Drain return to skillet. Add tomatoes, rice and 1/2 cup water. Cover and simmer 15 mins. Stir in cheese Stuff peppers 2/3 full arrange in slow-cooker.
Pour salsa over peppers.

Broccoli & Rice

1 bag chopped broccoli
2 cup Minute Rice
2 cans of cream of chicken soup
1 cup milk
1 small chopped onion
1 8 oz jar of cheese whiz

Directions:
Place all ingredients in a greased crockpot. Stir then cover.
Cook in crockpot until rice is soft. I usually cook on high for 1 hour then low for about another 2 hours.

Crock Pot Marinara

1 ( 16 oz.) can peeled tomatoes, cut up
1 ( 6 oz. ) can tomato paste
1 clove garlic, minced
2 tablespoons minced fresh parsley
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon seasoned salt
Cooked Spaghetti
Grated Parmesan
cheese

In crockpot, combine tomatoes, tomato paste, garlic, parsley, oregano, basil, salt and pepper and seasoned salt.

Cover and cook on Low 6 to 7 hours.
Serve over cooked spaghetti and top with cheese.

Makes about 3 cups

Savory Slow Coooked Chicken Cacciatore

16 oz pkg pappardelle or fettuccine pasta, cooked, drained
1 1/2 cups chicken stock
2 large onions, chopped
28 oz can crushed tomatoes in puree
4 cloves garlic, minced
1 tbs olive or vegetable oil
1/4 cup cornstarch
1 medium green bell pepper, cut into 2" long strips
1 pound mushrooms, cut in half
2 tsp Italian seasoning, crushed
3 pounds chicken parts, skin removed

Heat oil in skillet. Add chicken and cook until browned on all sides. Stir garlic, Italian seasoning, tomatoes, mushrooms, onions, pepper and 1 cup stock in slow cooker. Add chicken and turn to coat.

BBQ Beef Brisket (Slow Cooker)

8 oz can tomato sauce
1/4 cup molasses
2 tbs cider vinegar
2 tbs brown sugar
1 tbs chopped chipotles in adobo + 2 tsp adobo sauce
2 tsp chili powder
Salt and Pepper
2 onions, sliced
2 cloves garlic, chopped
2 1/2 pounds beef brisket, trimmed of excess fat
6 rolls
Coleslaw, pickles and potato chips

In a slow cooker, combine first 7 ingredients, 1/2 tsp salt and 1/4 tsp pepper, mix in onions and garlic. Cut beef crosswise into 3 pieces and add it to the slow cooker, nestling it among the onions.

Refried Beans (Crockpot)

1 lb. dried pinto beans
6-1/2 cups water
1/2 cup chopped onion
2 cloves garlic, minced
1 Tbs. salt
2 Tbs. chili powder
1 Tbs. cumin
1 tsp. oregano
4 oz. can chopped green chiliess

Cook all ingredients in crockpot on high 5-6 hours.
Mash beans in pot, leave lid off and cook for 30 more minutes or until thickened.

Serve as dip with tortilla chips or make burritos with them.

Zucchini Bread

2 eggs
2/3 C. vegetable oil
1 1/4 cup sugar
1 1/3 C. zucchini, peeled and grated
2 tsp. vanilla
2 C. flour
1/4 tsp. salt
1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 to 1 C. chopped nuts

With mixer, beat eggs until light and foamy. Add oil, sugar, grated
zucchini and vanilla. Mix well. Stir dry ingredients with nuts. Add to
zucchini mixture. Mix well.
Pour into greased and floured 2 pound coffee can or 2 quart mold. Place in Crock Pot.
Cover top with 8 paper towels.
Cover and bake on high 3 to 4 hours.

Meatloaf (Crock Pot)

2 lbs. ground beef
1/2 lb. sausage
2 med. onions, finely chopped
1 clove of garlic, chopped
2 tsp. salt
1/2 tsp. pepper
1 C. sour cream
1 can cream of mushroom soup
1 1/2 C. bread or cracker crumbs
1 1/2 C. milk

Soak bread or cracker crumbs in milk. Mix meat, seasonings, and soaked crumbs thoroughly.
In a separate bowl, mix sour cream and mushroom soup.
Make meat mixture into loaf and pour the sour cream-soup mixture over top.

Bake in crock pot 10 to 12 hours on low.

Crock Pot Pork Chops

6 to 8 lean pork chops
1/2 c. flour
1 tbsp. salt
1 (10 oz.) can chicken and rice soup
1 1/2 tsp. dry mustard
1/2 tsp. garlic powder
2 tbsp. oil

Coat pork chops in mixture of flour, salt, dry mustard, and garlic powder.
Brown in oil in skillet. Place browned pork chops in crock pot. Add can of soup.
Cover and cook on low for 6 to 8 hours or on high for 3 1/2 hours.

Porcipine Meatballs

1 1/2 lbs. lean ground beef
1/2 C. raw rice
1/2 C. onion, finely chopped
1/2 C. green pepper, finely chopped
1 egg
1 tsp. salt
1/4 tsp. pepper
1 (10 1/2 oz.) can tomato soup
1 can diced tomatoes and liquid

In mixing bowl combine ground beef, rice, onion, green pepper, egg, salt, and pepper. Mix well to blend.
Shape meat mixture into 24 meatballs, about 1 1/2 inches in diameter.

Place meatballs in crock pot.
Pour soup over meatballs.
Cover and slow cook for 7 to 8 hours.
Makes 4 to 6 servings.

Italian Sausage Spaghetti

2 lbs. Italian sausage
48 oz. spaghetti sauce
1 (6 oz.) can tomato paste
Green pepper, sliced thin
1 lg. onion, sliced thin
1 tbsp. Parmesan cheese
1 tsp. parsley flakes
1 C. water

Place sausage in skillet and cover in water. Simmer 10 minutes; drain. Meanwhile, place remaining ingredients in crock pot. Add drained sausage and cover; cook on low 4 hours. Increase to high; cook 1 hour more.
Cut sausage in bite-size slices and serve over cooked spaghetti.
Sprinkle with more Parmesan, if desired.

Simple Roast Beef

1 beef roast
8 ounces of mushrooms
2 potatoes
4 carrots
Parsley
1 can French onion soup

Mix all the ingredients together in the morning, cook on low in the crock pot all day, and you’ve got one tender roast with gravy too.

Spanish Rice

1 (16 oz.) can tomato sauce
3/4 c. water
2 tsp. chili powder
2 tsp. Worcestershire sauce
1 1/2 tsp. salt
3/4 c. rice, converted; raw

Stir all ingredients together.
Cover and cook on low 7 to 9 hours (High for 3 hours, then switch to low for the remaining time).
