Chicken Marsala~Carrabba's Italian Grill

1 Chicken breast, grilled
1 C. Dry Marsala wine
1/2 C. (1 stick) butter
pinch of salt
pinch of black pepper
1/2 C. Mushrooms, sauteed
Add Marsala wine, salt and pepper to a hot pan; reduce wine by 70%.
Several Tbsp. at a time, stir in butter until sauce is creamy.
Add hot sauteed mushrooms.
Pour sauce over grilled chicken before serving.
Servings: 1

Chocolate Dream~Carrabba's Italian Grill

1 box dark fudge brownie mix
1/4 C. Kahlua
2 C. prepared chocolate mousse
2 C. real whipped cream
1 oz semi-sweet chocolate shavings
Prepare brownie mix according to box instructions, using the two egg-recipe and substituting milk for the water.
Line two 9" square baking pans with either parchment paper or wax paper.
Spray bottoms with non-stick cooking spray.
Pour equal amounts of batter into each pan.
Bake at 325°F for 25 minutes, or until a tester inserted in the center comes out clean.
Allow to cool completely.

Sausage and Lentil Soup~Carrabba's Italian Grill

1 lb Italian sausage
1 large onion, chopped
1 stalk celery, chopped
2 large carrots, chopped
1 small zucchini, chopped
6 cups chicken broth
2 x 14½ oz cans diced tomatoes, undrained
2 cloves garlic, minced
1 tsp. salt
2 C. dry lentils, rinsed
black pepper, red pepper flakes, basil, oregano, parsley, thyme, to taste
Brown sausage; drain off fat.
In a large pot combine all ingredients; bring to a boil.
Reduce heat, cover.
Simmer for about 1 hour or until lentils are tender. Add water, if necessary, for desired consistency.

Meatballs~Carrabba's Italian Grill

1/2 lb. ground pork
1/2 lb. ground veal
1/2 lb. ground beef
2 large eggs, lightly beaten
1/4 C. grated Parmesan cheese
4 cloves garlic, finely chopped and sauteed
1/3 C. dry bread crumbs
1/4 C. finely chopped parsley
salt and freshly ground pepper
1 cup pure olive oil
Combine all the ingredients in a medium bowl, except olive oil and season with salt and pepper to taste.
Heat the oil in large saute pan over medium-high heat.
Roll the mixture into 1½" balls and fry until golden brown.
(Remove with a slotted spoon to a plate lined with paper towels.)

Parmesan Dressing~Carrabba's Italian Grill

1/4 C. milk
1/2 C. mayonnaise
1/4 C. grated parmesan cheese
1 tsp. white wine vinegar
1/4 tsp. Worcestershire sauce
Gradually blend milk into mayonnaise.
Mix in cheese, vinegar and Worcestershire sauce. Chill.
Serve on tossed salad greens.
Makes ¾ cup

Apple Martini-Carrabba's Italian Grill

2 shots vodka
1 shot DeKuyper's Sour Apple Pucker
½ shot Midori
1 slice Granny Smith apple or 1 maraschino cherry
Shake over ice for a full minute or until some crystals appear in the drink.
Strain into a chilled martini glass and garnish with the apple slice or cherry.
Makes one drink.

Corn Salsa II- Chipotle Mexican Grill

6 Ears Fresh Sweet Yellow Corn
2 Poblano Chilies
1/2 Red Onion
2 Red Jalapenos
1/3 Cup Chopped Cilantro
1 Tablespoon Lime Juice
Salt and Pepper to Taste
Roast the corn and Poblano chilies on a grill or BBQ and let cool.
Cut the corn off the cob. Dice the Poblano chilies, onion, and red jalapenos.
Combine all the ingredients and season to taste.

Spicy Corn Salsa - Chipotle Mexican Grill

2 cups frozen corn - fresh would be ideal
1/4 cup chopped cilantro
2 teaspoons finely chopped jalapeno
1 - 2 teaspoons sliced green onion tops
1/2 teaspoon kosher salt
2 teaspoons lime juice
Instructions
If using frozen corn, allow to thaw before preparing salsa. Chopped jalapeno very finely.
If you do not like heat, remove seeds, before chopping.
You may also want to start with 1 teaspoon of jalapeno before adding the second teaspoon.
Add chopped cilantro, salt, and green onion tops. Stir in lime juice. Stir well to mix the salsa together.

Spicy Guacamole~Chipotle Mexican Grill

1 large ripe avocado, peeled and pitted
2 teaspoons fresh lime juice
1/2 cup fresh cilantro, chopped
1/4 cup onion, finely chopped
2 large cloves garlic, finely chopped
2 large serrano chiles, seeded and chopped
1/4 teaspoon salt
Using fork, mash avocado with lime juice in small bowl. Add cilantro, onion, garlic, serrano chilies and salt; stir to combine.
Makes about 1 cup.

Ancho Chile Marinade for Meat Recipe-Chipotle Mexican Grill

1 (2 ounce) package dried ancho chiles
1 teaspoon black pepper
2 teaspoons cumin powder
2 tablespoons fresh oregano, chopped
6 cloves garlic
1/2 red onion, quartered
1/4 cup vegetable oil
4 chicken breasts or meat of choice
Soak dry chiles in water overnight or until soft. Remove seeds. Add all ingredients except chicken in food processor.
Puree until smooth.
Spread mixture over chicken breasts and refrigerate at least one hour, up to 24 hours.

Basmati Lime Rice-Chipotle Mexican Grill

1 tsp olive oil or butter to equal
2/3 C. white basmati rice
1 C. water
1/2 tsp. kosher salt
2 tsp. fresh cilantro
1 lime
In a heavy 2-quart saucepan heat oil or butter over low heat,stirring occasionally until melted.
Add rice and lime juice, cook, stirring, 1 minute.
Add water and salt and bring to a boil.
Cook covered over low heat until rice is tender and water is absorbed, about 25 minutes.
Fluff rice with a fork.

Cheddar Bay Biscuits

2 1/2 cups Bisquick backing mix
1 cup finely grated cheddar cheese
3/4 cup milk
2 tablespoons melted butter
1/8 teaspoon garlic powder
Brush on top
1/2 cup melted butter
1/2 teaspoon garlic powder
1/2 teaspoon dried parsley flakes
Dash salt
Preheat oven to 400 degrees.
Combine Bisquick with cheddar cheese, milk, 2 tablespoons butter (that has been melted in microwave), and 1/8 teaspoon garlic powder in a medium bowl.
Mix until well blended.
Grease a muffin tin and drop approximately 1/4 cup portion of the dough in each tin.

Ingredients :
4 - 1" thick 12 oz. rib-eyes
Coffee Rub:
1/4 cup each finely ground espresso and chili powder
2 Tbsp. paprika
2 Tbsp. brown sugar
1 Tbsp. dry mustard
1 Tbsp. kosher salt
1 Tbsp. black pepper
1 Tbsp. coriander
1 Tbsp. oregano
Caramelized Shallot Butter:
1 - 4 oz. stick softened unsalted butter
2 oz. of caramelized shallots (instructions below)
1 tsp. kosher salt
1 tsp. Worcestershire sauce
1/2 tsp. black pepper
Mix together all the ingredients for the coffee rub. Set aside till needed.

1 1/3 cups warm water (105 degrees F)
1/4 cup nonfat dry milk
1/2 teaspoon salt
4 cups flour
1 tablespoon granulated sugar
1 package dry yeast
2 tablespoons vegetable oil (for dough)
9 ounces vegetable oil (3 ounces per pan)
Butter flavored Pam
Preparation:
Put yeast, sugar, salt, and dry milk in a large (2 quart.) bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again.
Add flour and stir until dough forms and flour is absorbed.
Turn out on to a flat surface and knead for about 10 minutes.

Creamy Roquefort Dip Ingredients:
1/2 cup Roquefort cheese, crumbled
3 tsp cream cheese, softened
1/2 cup mayonnaise
1 Tbsp lemon juice
1 Tbsp wine vinegar
1/2 cup sour cream
12 chicken wings, disjointed
Oil, for frying
1/2 cup unsalted butter
1 cup hot red pepper sauce
Preparation:
In a medium size bowl, cream the Roquefort and cream cheese until smooth. Mix in the remaining ingredients and blend well. Chill for 2 hours.
Using a fryer or a large pot, heat oil to 350° F. Deep fry the wings until golden and crispy, approximately 10 minutes.

Preheat oven to 425° F.

1 cup self-rising flour
1 cup self-rising cornmeal, or you may use a cornmeal mix such as Aunt Jemima?s
2 eggs
1 Tbsp granulated sugar
1/2 cup buttermilk
1/3 cup plus 1 Tbsp water
1/4 cup vegetable oil or bacon grease
Oil or butter for frying
Preparation:
Mix all ingredients well except for the frying oil. Heat oil in a skillet over medium heat.
Drop mixture by tablespoonfuls into hot skillet. Use approximately 2 Tbsp batter per hoecake. Brown until crisp; turn and brown on the other side.
Drain on paper towels. Leftover batter will keep in refrigerator for up to 2 days.

The Lady's Cheesy Mac-The Lady and Sons

Ingredients:
4 cups cooked elbow macaroni, drained
2 cups grated Cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 Tbsp butter, cut into pieces
1/2 tsp salt
1 cup milk
Preparation:Preheat oven to 350° F.
Once you have the macaroni cooked and drained, place in a large bowl and, while still hot, add the Cheddar.
In a separate bowl, combine the remaining ingredients and add to the macaroni mixture.
Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes.
Top with additional cheese if desired.
Servings :6 to 8

IHOP Pumpkin Pancakes

2 eggs
1 1/4 cups buttermilk
4 Tablespoons butter, melted
3 Tablespoons canned pumpkin
1/4 cup granulated sugar
1/4 teaspoon salt
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon allspice
Preheat a skillet over medium heat. Coat pan with oil cooking spray.
Combine eggs, buttermilk, butter, pumpkin, sugar & salt in a large bowl. Use an electric mixer to blend ingredients.
Combine remaining ingredients in a small bowl. Add dry ingredients to wet ingredients & blend with mixer until smooth.

Peppermint Patties

3/4 cup sweetened condensed milk
1 1/2 teaspoons peppermint extract
4 cups confectioners' sugar
3 cups semisweet chocolate chips
2 teaspoons shortening
Directions:
In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time,
to form a stiff dough that is no longer sticky.
Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties.
Let patties dry at room temperature two hours, turning once.

1 (3 ounce) package lemon Jell-O
1 cup boiling water
8 ounces cream cheese
1 cup granulated sugar
5 tablespoons lemon juice
1 can Carnation milk, well chilled
Graham crackers, crushed
Dissolve Jell-O in boiling water. Cool until slightly thickened. Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well. In a separate bowl, beat the Carnation milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer.

For Crust:
2 cups graham cracker crumbs, crushed (approximately 2 sleeves) USE GROUND WALNUTS INSTEAD
1/2 cup butter, melted
1/4 cup granulated sugar EQUAL OR SPLENDA
For Filling:
3 (8 ounce) packages cream cheese, room temperature
1 cup sugar EQUAL OR SPLENDA
1 cup sour cream
1/4 cup flour CARBALOSE/ALMOND FLOUR
2 teaspoons vanilla
4 eggs
3/4 cup trader joe's key lime juice
In 9 or 10 inch springform pan, combine crumbs, melted butter, and 1/4 cup sugar. Press evenly over bottom of pan and halfway up sides.
Bake at 375 for 7-8 minutes, no longer.

Rick's on the Bricks Fried Dill Pickles

1 16-oz. jar hamburger dill pickles -- sliced
1 cup whole milk
5 drops yellow food coloring -- (5 to 7 drops)
3 cups flour
salt and pepper
vegetable oil -- for frying
Spread pickles in single layer on paper towels to drain. In small bowl, combine milk and enough yellow food coloring to produce a medium color. Place flour, salt and pepper to taste in large, shallow bowl.
Set aside. To small saucepan, add enough oil to come 1 inch up the side of the pan.
Heat oil to 350 F. over medium-high heat.

KFC Chicken

3 pounds Chicken pieces
1/2 cup Flour
1 package Dry Italian-style salad dressing
Salt
1 Egg
2 tablespoons Club soda
1 cup pancake mix -- (or more)
1 teaspoon Poultry seasoning
1 teaspoon Paprika
1/4 teaspoon Pepper
Oil for deep frying
Rinse chicken pieces; pat dry with paper towels. Mix flour with dry salad dressing mix & salt to taste.
Dip chicken pieces in this mixture and let sit for a couple of minutes.
Beat egg and club soda; in another shallow bowl, blend pancake mix with poultry seasoning, paprika and pepper.

2 Cup Sugar
1 Cup Water
1/4 Teaspoon Anise extract
1 Teaspoon Vanilla extract or Vanilla Bean Extract
3 Drops yellow food coloring
1 Fifth vodka
Combine sugar and water in a pan and bring to a boil. Boil for 1 minute and immediately reduce heat. Simmer for 1 hour or until thickened. Remove from heat and cool.
Pour sugar−water syrup into a sterilized quart−size bottle. Add anise extract, vanilla and food coloring. Stir gently and add the vodka.
Cover and let the mixture sit for 10 days to 2 weeks before serving.

1/2 C. Mayo
1/3 C. White Vinegar
1 tsp Vegetable Oil
2 TBSP Corn Syrup ..SPLENDA TO TASTE
2 TBSP Parmesan Cheese
2 TBSP Romano Cheese
1/4 tsp Garlic Salt - or one clove garlic minced
1/2 tsp Italian Seasoning
1/2 tsp Parsley Flakes
1 Tbsp Lemon Juice
Olive Garden Salad Mix
Mix all ingredients in blender 'til well mixed.
If this is a little too tart for your own personal taste, add a little extra Splenda.

Peppermint Patties

8 tablespoons of corn syrup
4 tablespoons of soft butter
3 lbs. of sifted powdered sugar
1 can of condensed milk
Peppermint flavoring
1/2 lb. bar chocolate (sweetened or unsweetened)
1/2 bar of paraffin wax
Combine corn syrup, soft butter, icing sugar, condensed milk. Add 1 peppermint flavoring to taste.
Mix wel until it kneads like heavy dough. Roll dough to 1/8 inch thick. Use small cookie cutter for patties.
Let harden on wax paper, then dip.
Melt chocolate and paraffin in tall can over boiling water; cool slightly and then dip patty.
Let cool on wax paper.

Panera Bread Broccoli Cheese Soup

1 tablespoon butter, melted
1/2 medium onion, chopped
1/4 cup melted butter
1/4 cup flour
2 cups half-and-half
2 cups chicken stock or bouillon
1/2 pound fresh broccoli
1 cup carrots, julienned
salt and pepper to taste
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar
Directions:
Saute onion in butter. Set aside. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and slowly add the half-and-half (this is called making a roux). Add the chicken stock whisking all the time. Simmer for 20 minutes.
