French Toast

Ingredients
1/2 cup milk
2 eggs
1/2 teaspoon salt
1/2 teaspoon vanilla
1 tablespoon sugar
sliced bread

 

Procedure
Beat eggs in shallow dish using fork. Beat in salt, sugar, milk, and flavoring. Preheat griddle; brush with butter. Quickly dip bread into egg mixture, one at a time, coating both sides (let set in egg mixture for 1 minutes on each side).
Brown on griddle, turning once.

Cinnamon Rolls

Ingredients
2 packages active dry yeast
1/2 cup warm water
1/3 cups sugar
1/3 cup shortening
2 tablespoons salt
2 cups milk, scalded
1 1/2 cups cold water
10 to 12 cups flour

 

Procedure
Soften yeast in warm water. In large mixing bowl, blend sugar,shortening, salt and milk until shortening is melted. Add cold water; cool to lukewarm. Stir in yeast.

Gradually add flour to form a stiff dough. Knead until smooth and satiny (about 5 to 10 minutes). Place in greased bowl, turning dough to grease all sides. Cover.

Cheerios Breakfast Bars

Ingredients
1/2 cup maple syrup
1/2 cup peanut butter
3 1/2 cups cheerios cereal
chocolate chips

Procedure
Mix together syrup and peanut butter. When mixture is smooth, add cereal, and stir to coat.
You may also wish to embellish the recipe by adding a handful of carob or chocolate chips or chopped peanuts.
Press mixture into a lightly greased oblong pan, and let it cool.
(You may need to refrigerate in order for it to harden.)

When cool, cut into squares, and enjoy.

Breakfast Sausage Casserole

Ingredients
2 1/2 cups seasoned croutons
1 pound  sausage
4 eggs
2 1/4 cups milk
1 can cream of mushroom soup
10 ounces frozen spinach, thaw and squeeze dry
1 4 ounces can mushrooms, drain and slice
1 cup shredded cheddar cheese
1 cup shredded jack cheese
1/4 teaspoon dry mustard
picante or salsa

 

 

Procedure
Spread croutons on bottom of greased 13x9" baking dish.

Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain.
Sprinkle over croutons. Sprinkle mushrooms over evenly. Sprinkle spinach over evenly.

Breakfast Potatoes (Crock Pot)

Ingredients
4 potatoes-sliced
1 onion sliced thin
4 oz. Cheese grated
1 Tab. Butter or margarine
4 slices bacon - fried or microwaved or bacon bit (sprinkle on liberally)

Procedure
Layer in Crockpot in order from potatoes to bacon, then a 2nd layer in the same order.
Cook on low 8 - 10 hours

Breakfast Brunch

Ingredients
6 eggs
16 slices bread
1 1/2 cups shredded cheddar cheese
10 slices ham
3 cups milk
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/2 cup butter
1 cup cornflakes

Procedure
Butter both sides of the 16 slices of bread. Place 8 slices in a 8 x 10 pan which is 2" deep.
Cover the bread with the sharp cheese and ham slices. Top this with the remaining 8 slices of bread.

Mix the eggs, milk, mustard, and salt together. Pour over the casserole and refrigerate overnight.
The next morning, combine 1/2 cup butter and the cornflakes, and put on top of the casserole.
 

Basic Scones

Ingredients
4-1/2 cups all-purpose flour
3/4 cup white sugar
2 tablespoons and 1-1/2 teaspoons baking powder
3/4 teaspoon salt
1 cup and 2 tablespoons butter
2 egg, beaten
1-1/2 cups milk 

Procedure
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.

In a large bowl, combine flour, sugar, baking powder, and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened.

Basic Cheese Strata

Ingredients
6 slices white bread flour
3 cups shredded mild cheddar
3 eggs
2 cups milk
1/4 teaspoon seasoned salt
1 teaspoon dry mustard
1 4 ounces can diced green Chiles (optional)

 

 

Procedure
Cut bread into small cubes. Layer bread and cheese in a buttered 6- or 7- x 10-in. baking dish.
Beat together eggs, milk, salt and mustard. Pour over cheese and bread. Cover and refrigerate overnight.

Bake uncovered in a preheated 350ºF for 45 minutes or until light and fluffy. Serve immediately.
 
6 servings.

Banana Pancakes

1 cup Whole Wheat Pancake mix
1 Egg
2 Tbs Peanut Butter
1 Banana thinly sliced

Procedure
Prepare batter according to package directions, adding in the egg.
Put batter on hot griddle, & place banana slices on each pancake.
Flip pancakes when edges are cooked.

Add a dab of peanut butter on each one before serving.

Serve with whipped skim milk to drink.

Apple Oat Breakfast Bars

Ingredients
2 cups rolled oats
1 cup raisins or chopped dates
1 or more cups unsweetened coconut
1 cup unsweetened chocolate chips
2 small apples, chopped, or 1 jar of applesauce
2 or more cups milk
1 cup chopped almonds (or other nuts)
Optional seasonings such as cinnamon or apple pie spices

Procedure
Measurements may vary depending on size of pan. Preheat oven.
In an 8x8" baking dish, sprinkle 1/2 cup of nuts, 1/3 cup of coconut and 1/3 of the oats on the bottom of dish.

Apple Lodge Breakfast Pizza

Ingredients
1 tube Crescent Rolls
1 lb. breakfast sausage
1 small bag Frozen Hash Browns
8 oz. Grated Cheddar Cheese
6 Eggs
1/2 cup Milk

Procedure
Preheat oven to 350.
Spray 10x13" pan with nonstick spray.
Brown, crumble, and drain sausage.
Press crescent rolls dough onto bottom of pan so that it stretches to edges.
Cover dough with drained sausage.
Top with frozen hash browns and grated cheese.

Scramble 5-6 eggs with milk(uncooked) and pour over all other ingredients.

Place in 350 degree oven for 35-55 min.
Test for doneness in middle with tooth pick.

Apple Breakfast Lasagna

1 cup sour cream
1/3 cup firmly packed brown sugar
2 packages frozen French toast (9 oz each)
1/2 pound sliced boiled ham
2 cups shredded cheddar cheese
1 can apple pie filling
1 cup granola cereal with raisins.

In a small bowl, blend sour cream and brown sugar. Chill.
Place 6 French toast slices in the bottom of a greased 13x9-inch baking pan. Layer ham, 1 1/2 cups cheese and remaining 6 slices of French toast. Spread apple pie filling on top and sprinkle with granola.

Bake at 350ºF for 25 minutes.

Country Brunch Skillet

6 bacon strips
6 cups frozen cubed hash brown potatoes
3/4 cup chopped green pepper
1/2 cup chopped onion
1 tsp salt
1/4 tsp pepper
6 eggs
1/2 cup shredded cheddar cheese

In a large skillet over medium heat, cook bacon until crisp. Removed bacon; crumble and set aside. Drain pan, reserving 2 tbsp of the drippings. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes.

Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes.

Apple Burritos

2 large Granny Smith apples
½ cup orange juice
1 TBS lemon juice
1/3 cup firm packed light brown sugar
A pinch of ground cloves
¼ tsp cinnamon
1 Tbs cornstarch
2 Tbs cold water
½ cup chopped walnuts
4 (7- to 8-inch) flour tortillas

Glaze:
1 tablespoon melted butter
Sugar

Peel, core, and quarter the apples. Then cut the quarters crosswise into thin slice and combine them with the orange and lemon juices in a medium-size saucepan. With the pan partially covered, bring the mixture to a boil.

Cafe' Au Lait

Ingredients
1 cup milk
1 cup light cream
3 tablespoons instant coffee
2 cups boiling water

 
Procedure
Over low heat or in double boiler, heat milk and cream till hot.
Meanwhile, dissolve coffee in boiling water. Before serving, beat milk mixture with rotary beater-till foamy.
Pour milk mixture into one warmed pitcher or server, and coffee in another.

To serve: Fill cups from both pitchers at the same time, making the streams meet en route.

Makes 6 servings.

All In One Breakfast Casserole

6 eggs
1 cup milk
6 ounces cheddar cheese grated
1 pound sausage or bacon
Frozen hash brown patties

Procedure
Line an 8x8-inch glass baking dish with frozen hash browns. Sprinkle hash browns with fried, drained and crumbled sausage or bacon.

Mix together eggs and milk. Pour over meat and hash browns.
Top with grated cheddar cheese.

Bake at 350 degrees for 45 minutes to 1 hour. Can be prepared the night before.
