Hot Potato Salad

10 medium potatoes
2 tsp. salt
1/2 tsp. celery seeds
1/8 tsp. pepper
6 slices bacon, cut into 1-inch pieces
1 cup chopped onion
1/2 cup vinegar
2 Tbs. sugar
1 Tbs. water
1 egg, beaten
2 Tbs. minced fresh parsley
Cook potatoes in boiling salted water about 30 minutes or until tender. Drain well, and cool slightly. Peel and thinly slice potatoes; add salt, celery seeds, and pepper.
Fry bacon until crisp; remove from pan, and drain on paper towels. Saute onion in bacon drippings; remove from pan, and add to potatoes, reserving drippings. Add vinegar, sugar, and water to drippings; simmer 2 minutes. Add vinegar mixture to egg slowly, stirring constantly; pour dressing over potatoes. Add bacon and parsley; toss.
Serve warm.
Yield: 8-10 servings.
