Blintz Pancakes (Gluten-Free)

Ingredients
4 eggs, beaten or egg substitute equal to four eggs
1 TBSP white sugar
1 cup plain yogurt
2 TBSP potato starch
1 cup cottage cheese
1/4 cup rice bran
1/2 tsp salt
2/3 cup brown rice flour
Procedure
Beat eggs in bowl.
Add other ingredients and mix well.
Bake on greased griddle.
NOTE:These are good plain or with butter. They may be also served with sugar or fruit sauces.
