Spare Ribs for Two

Michie — Wed, 08/19/2009 - 6:40am

1 Tbsp. cornstarch
1/3 cup of dark corn syrup
3 Tbsp. soy sauce
1 1/2 tsp. ground ginger
2 Tbsp. vinegar
2 cloves of garlic, crushed
2 lbs. of meaty spareribs
salt and pepper

For the marinade, combine the cornstarch, corn syrup, soy sauce, ginger, vinegar and garlic.
Cut the spareribs into serving size pieces and place them in a single layer in a shallow dish.
Pour the marinade over the meat and refrigerate for at least 4 hours (preferably overnight).
Remove the ribs from the marinade and season with salt and pepper.
Place in a shallow baking dish and cover with aluminum foil.
Bake at 350 degrees for 1 1/2 hours.
Remove the foil cover and broil until slightly crisp, frequently basting with remaining marinade.
