Chocolate Ice-Cream Sandwiches

1/4 cup plain flour
2 tablespoons clear honey
2 tablespoons caster sugar
1 egg white
2 tablespoons butter, melted
200 g low-fat ice cream
100 g dark chocolate, melted, to serve

Preheat oven to 180C/160C fan forced. Line 2 large baking trays with baking paper. Process flour, honey, sugar, egg whites and margarine until combined.
For each biscuit, place 1 teaspoonful of mixture on prepared tray; spread to a 5cm circle. Bake for 8-10 minutes or until golden brown, swapping trays halfway through cooking. Let biscuits cool on trays (biscuits will be crisp on cooling).
Sandwich biscuits with ice-cream.    Place in the freezer for 15-20 minutes to set.
Drizzle biscuits with melted chocolate to serve.
