Pumpkin Cookies

Ingredients
3 c. shortening
3 c. brown sugar
3 c. white sugar
6 c. pumpkin
12 eggs
12 c. flour
6 tsp. baking soda
6 tsp. baking powder
6 tsp. cinnamon
3 tsp. vanilla
4 c. dates, chopped (optional)
4 c. nuts, chopped (optional)
Procedure
Cream shortening and sugars together; add pumpkin and eggs. Add dry ingredients slowly, and mix. Add vanilla, nuts, and dates.
Scoop onto greased baking sheets with a #40 (purple) scoop.
Bake at 325 degrees for 12 to 15 minutes.
Makes approximately 18 dozen cookies.
