Muffin Mix

Ingredients
2 cups self rising flour
1/2 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Procedure
Combine all ingredients in large mixing bowl. Blend together with wire whisk. Place mix into an airtight container.
Mix can be given by itself with a recipe card for variations, or can be tucked into a white lidded basket with some mugs and beverage mixes.
When they are in season, include fresh blueberries or raspberries in the basket for those muffin mix variations.
Muffins
1 package Muffin Mix,
1 egg,
3/4 C. milk,
1/4 C. vegetable oil.
Preheat the oven to 400ºF.
In a large bowl, combine the muffin mix with the egg, milk and oil. Stir the mix until just blended; do not overmix.
Spoon the batter into greased muffin pans, filling them 3/4 full.
Bake for 15-18 minutes or until golden brown.
**For raspberry or blueberry muffins, add 1 cup of fruit to batter and bake as directed.
